Preparing food during a mountain expedition requires organization, experience, and the ability to adapt. Our trekking cooks and kitchen assistants understand the rhythm of the mountains, respect the environment, and put care and passion into every Peruvian dish they prepare.

Along with their talent and experience, our cooks receive ongoing training to improve their techniques, enhance the presentation of each dish, and reinforce proper food-handling practices during multi-day journeys.

Trail Operations and Mountain Logistics

On our adventure tours, many meals are prepared directly along the route at campsites and scenic locations. Our cooks have the necessary equipment, including kitchen and dining tents, to work efficiently and stay organized at every stage of the journey. This setup allows meals to be prepared and served smoothly throughout the trek.

The combination of native ingredients and traditional Peruvian recipes creates dishes filled with aromas, colors, and textures, turning every meal into a true culinary experience. Some of our featured ingredients include:

  • Quinoa: An essential Andean superfood, quinoa provides nutrients, protein, and energy. It is also naturally gluten-free and can be served in a variety of preparations.
  • Choclo or corn: One of the most representative ingredients in Peruvian cuisine. It provides carbohydrates, fiber, and energy, making it an excellent food for regaining strength and continuing the day's hike.

  • Lomo Saltado: This popular Peruvian-Chinese fusion dish combines tender strips of beef stir-fried with onions and tomatoes, served with crispy French fries and rice. It is a hearty, flavorful meal that provides plenty of energy after a long day of hiking.
  • Ají de Gallina: A delicious creamy chicken dish served in a smooth, mildly spicy yellow chili sauce. It is accompanied by rice, potatoes, and olives, making it a comforting meal to enjoy after a day on the trail.
